These are simple and delicious energy bites to have on hand for those busy days! Prep a batch ahead of time and store them for a convenient snack. They will be a hit with everyone in your life (if you decide to share, that is).
Most date balls are overly sweet – not this recipe!
Date Energy Balls
Ingredients
- 1 cup pitted dates
- 1 cup pecans
- 1/2 cup nut butter
- 1 cup oats
- 1/4 cup hemp seed
- 1/4 cup flax seed
- 1/4 cup coconut flakes
Directions
- Soak pitted dates in hot water for 10 minutes to soften.
- Drain dates, add to food processor with pecans and nut butter and mix, mix, mix!
- Add oats, hemp seeds and flax seeds to food processor. Keep mixing until well combined. Making sure to give the hard working food processor breaks every few minutes so it doesn’t overheat!
- Roll balls into crushed coconut flakes. Voila! Your date balls are ready.
Serve them right after or store them in an airtight container in fridge for up to 1 week.
